Macayo’s Mexican Food Announces Chimi Fiesta Days Beginning August 8

    On Sunday, August 8, Macayo’s Mexican Food locations around the valley are honoring their signature dish — the chimichanga — with the Chimi Fiesta celebration. Macayo’s, which developed the classic meat-filled chimichanga back in 1946, is rolling out red carpet (ahem, platter?) for the following chimichanga specialties:

     

    Mini Chimi Trio — The perfect way to sample Macayo’s scratch made sauces along with a variety of meat-filled chimis, this dish includes two shredded beef mini chimis covered in Macayo’s zesty relleno sauce, two shredded chicken mini chimis covered in Macayo’s red enchilada sauce and two pork mini chimis covered with Macayo’s fire-roasted tomatillo sauce, all served with a side of Macayo’s famous baja sauce for $10.99

     

    Chicken Poblano Chimi — Featuring a farm-fresh poblano chile roasted and stuffed with shredded chicken, smothered in red enchilada sauce, then topped with Macayo’s famous baja sauce, jack cheese and pico de gallo and served with a side of refried beans for $12.99

     

    Chipotle BBQ Pork Chimi — The cure for classic BBQ craving, this chimi features pork carnitas tossed in chipotle BBQ sauce, smothered with Macayo’s famous baja sauce then topped with jack cheese and pico de gallo and served with a side of rice and ranchero beans for $12.99

     

    Verde Shrimp Chimi — Macayo’s verde shrimp enchiladas turned chimichanga! This chimi features sautéed shrimp with green chiles and onions, topped with fire-roasted tomatillo sauce, jack cheese and pico de gallo and served with rice and black beans for $16.49

     

    Of course, no Chimi Fiesta is complete with dessert! Enjoy Macayo’s decadent Mini Chocolate Chimis, featuring bite-sized chocolate chimis served with vanilla ice cream and chocolate fudge drizzle, for $5.99.
